Recipe
A Spanish dish that everyone should try at least once.
Preparation time: 25 minutes
Ingredients: oil, onion, garlic, zucchini, pepperoni, paella rice, white wine, vegetable stock, tomato, turmeric, paprika powder, salt, pepper, saffron, tofu, peas, olives, parsley, hot sauce
For 2 people
2 tbsp oil, heat
1 small onion, chopped
2 cloves of garlic

200 g courgettes, diced
Add 1 diced pepper, continue to sauté briefly.
Add 100 g paella rice, steam until translucent.
Deglaze with 100 ml white wine
Add 1 sliced tomato.
250 ml vegetable bouillon
1/2 tsp paprika powder
1 tsp turmeric
1 pinch of saffron to add.
Let the rice and vegetables simmer for about 20 minutes.
Season with salt and pepper.
Add 100 g of peas.
Tofu:
300 g tofu, diced
Mix with salt, pepper and 1 tbsp hot sauce
Fry in a little oil for about 3-4 minutes.
Add tofu to paella. Top with fresh herbs like basil and some sliced olives.
Serve: With some fresh lemon slices.
