vegan Mediterranean penne

Vegetables made in the oven. So easy, so fast. In addition, some delicious penne cooked and topped with cheese of your choice. This is the short summary of this delicious penne recipe.

Preparation time: 20 minutes
Baking&Cooking: 20 minutes
For 2 people
Cook penne in boiling salted water according to package directions. For 2 people I use about 200 g pasta.
Vegetables:
Cut 200 g courgettes into cubes
Cut 200 g tomatoes into cubes
100 g whole mushrooms (large ones halved or quartered)
1/2 onion sliced
2 garlic cloves finely chopped
1 tbsp vegetable oil
1 tsp herbs
1 tsp salt
Mix a little chilli + pepper on a piece of baking paper.
Bake at 180°C for 20 minutes.
Combine penne and finished vegetables, if necessary stir 1 dl of water with a little stock and add to penne to create a sauce. Our own tomatoes are very juicy, which makes this step unnecessary for me.
Add cheese. For me it was the softy from V-Love @migros (unpaid advertising), it harmonizes wonderfully with a mushroom. A small taste explosion guaranteed.
