Recipe
This cake is one of the traditional pastries of Viennese cuisine.
Preparation time: 20-30 minutes
Bake: approx. 30 minutes. Refrigerate: 4 hours
Ingredients: Butter, chocolate, eggs, sugar, salt, flour, cocoa powder, jam, cream
For a small cake with a diameter of 18 cm
70 g butter, melt
Separate 3 eggs
Beat egg whites until stiff
Add egg yolks to melted butter. In addition to the egg yolk and butter mixture:
50g sugar
Add 1 pinch of salt and stir for 2-3 minutes to form a lighter mixture.
50 g chocolate, melt. Stir into the egg yolk-sugar mixture.
Stir in 1 tablespoon of cocoa powder as well.
Add egg whites to the chocolate mixture. Undergo.
Sift in 60 g flour and mix to form a smooth dough.
Pour into springform pan.
Baking: At 180°C hot air for approx. 30 minutes.
Let cool down.
Halve the dough.
Heat 3 tablespoons of jam of your choice in a pan until it becomes liquid.
Spread the base with half of the jam. Put the lid on it. Pour the remaining jam over the lid.
Ganache:
75 g chocolate, melt
Add 3 tablespoons of cream.
Pour ganache over cake.
Let the ganache solidify in the refrigerator for about 3 hours,
