Pumpkin soup with leeks

Pumpkin all year round from your own garden? That's fine! Simply blanch the pumpkin and put it in the freezer.
Preparation time: 20 minutes
Cooking: 30 minutes
Ingredients: Leek, Pumpkin, White Wine, Vegetable Bouillon, Vegetable Oil, Optional: Croutons
For 2 people:
Cut 30 g leeks into slices
Heat 1 tbsp oil in a pan, add the leek. steaming. Deglaze with 2 tbsp white wine.
Add 400 g pumpkin (chopped).
2dl water
Add 1/2 cube of vegetable stock (approx. 1/2 teaspoon).
Simmer on low for 30 minutes. Puree with blender.
Optional: Top with a little fresh leeks and croutons.
