vegan protein arancini
Recipe
These spicy, delicious arancini are equipped with extra protein.
Preparation time: 45 minutes
bake: 20 minutes
Ingredients: oil, onions, garlic, risotto rice, white wine, vegetable stock, salt, pepper, tofu, dried herbs, yeast flakes, flour, breadcrumbs, paprika powder
For approx. 8 small balls
1 onion, finely chopped
2 garlic cloves, press
2 tbsp oil, let it get hot

Sweat 125 g risotto rice in a saucepan
Deglaze with 3 tbsp white wine.
Gradually add 500 ml vegetable stock to the risotto rice. The rice should always be just covered with broth. Cook for 20-25 minutes. Let cool down.
100 g tofu, mashed
10 g yeast flakes
salt and pepper
mix in the dried herbs.
Add to cooled risotto rice.
Form 8 small arancini.
breading:
1 tbsp oil
35 grams of flour
50ml of water
1/4 tsp salt, mix.
Arancini in the breading then turn in
Mix 50 g of breadcrumbs with 1/2 tsp of paprika powder until the arancini are well coated.
Put on a baking sheet.
Baking: At 180°C hot air for 25 minutes.
Matching: tomato sauce.
