Zutaten Spinatwaffeln: Mehl, Spinat, Salz, Kräuter getrocknet, Pfeffer, Apfelessig, "Käse", pflanzliche Milch
Spinatwaffeln (ergibt 2 Portionen):
150 g Mehl
1 TL Salz
2 TL Kräuter getrocknet
1 TL Backpulver
1 TL Apfelessig mischen
60 g Spinat (ergibt ca. 1 Würfel tiefgefrorenen Spinat aufgetaut)
mit 1 dl Pflanzenmilch mixen, bis eine grüne Flüssigkeit entsteht. Saisonal den Spinat mit 30 g Bärlauch zu ersetzen.
Zu den trockenen Zutaten geben.
30 g geriebener "Käse" daruntermischen. Im Waffeleisen einige Minuten backen.
Optional: Guacamole, veganer Aufstrich, Micro Greens, Rüebli-Lachs etc. passen super dazu. Oder wie wär's überbacken mit geriebenem Käse?

Waffeln lassen sich wunderbar auch einfrieren und auf Vorrat produzieren.
Hearty spinach waffles vegan

Ingredients spinach waffles: flour, spinach, salt, dried herbs, pepper, apple cider vinegar, "cheese", non-dairy milk
Spinach Waffles (makes 2 servings):
150 grams of flour
1 tsp salt
2 teaspoons dried herbs
1 teaspoon Baking powder
Mix in 1 tsp apple cider vinegar
60 g spinach (yields approx. 1 cube of frozen spinach, thawed)
mix with 1 dl plant milk until a green liquid is formed. Seasonally replace the spinach with 30 g wild garlic.
Add to the dry ingredients.
Mix in 30 g grated "cheese". Bake in the waffle iron for a few minutes.
Optional: Guacamole, vegan spread, micro greens, carrot salmon, etc. go great with it. Or how about baked with grated cheese?
