Für 1 Portion:
100g Reis
siedendes Salzwasser
Reis nach Packungsanleitung kochen. Abkühlen lassen.
Kichererbsen:
1/2 Dose Kichererbsen ca. 120g
1 Knoblauchzehe gepresst
1TL Olivenöl
1/4TL Salz
wenig Pfeffer
1 TL Kräuter
1 TL Paprikapulver
in einer Schüssel mischen, auf einem Backblech verteilen für 20 Minuten bei 180°C knusprig backen.
Salatsauce:
1 TL Rapsöl
1 TL Weissweinessig
wenig Senf
1 TL Naturjoghurt
1TL Mayo
Salatgewürz mischen
Zusammenstellen:
1. Reis in die Schüssel geben.
2. Kichererbsen und Gemüse nach Wahl auf Reis verteilen. Bei mir waren es Karotten, Mais, Tomaten, Kohl und Broccoli (super auch für die Resteverwertung)
3. Mit Salatsauce übergiessen, geniessen.
Gutes getan für Magen, Geschmack und Gesundheit.

"Eat the rainbow"
For 1 portion:
100g rice
boiling salt water
Cook rice according to package instructions. Let cool down.
Chickpeas:
1/2 can of chickpeas approx. 120g
1 garlic clove pressed
1 tsp olive oil
1/4 teaspoon salt
little pepper
1 tsp herbs
1 tsp paprika powder
mix in a bowl, spread on a baking tray and bake for 20 minutes at 180°C until crispy.
salad dressing:
1 tsp canola oil
1 tsp white wine vinegar
little mustard
1 tsp natural yoghurt
1 tsp mayo
Mix in the salad seasoning
Assemble:
1. Add rice to the bowl.
2. Spread the chickpeas and vegetables of your choice over the rice. For me it was carrots, corn, tomatoes, cabbage and broccoli (great for using up leftovers too)
3. Pour the salad dressing over it and enjoy.
